Zesty Lemon White Chocolate Truffles

I LOVE lemon.

I was the weird kid who would ask for lemon slices at restaurants with my family - so I could scrunch up my face in sour delight as I popped a slice in my mouth (much to my mother's embarrassment).

I've always dreamed of one day having my own little lemon tree so I could experiment with creating endless lemony-inspired goodies to eat.

These Zesty Lemon White Chocolate Truffles are delicate yet 'makes your mouth water as soon as you start thinking about taking that first sour bite'.

Delicious. Fancy. Easy as. Let's get started...

Ingredients

Lemon Zest (from 1 large lemon)
✅ 1 cup White Chocolate Melts (170 grams or 6 oz)
✅ ¼ cup Unsalted Butter (60 grams or 2 oz)
✅ 3 tablespoons Thickened Cream (also know as 'heavy whipping cream') (45 grams or 1.6 oz)
✅ ½ teaspoon Lemon Zest (extra)
✅ ¼ teaspoon Vanilla extract

Toppings
✅ Topping #1: ¼ cup Powdered Sugar (for dusting) (also known as 'icing sugar')
✅ Topping #2: A little extra Lemon Zest + White Sugar (optional: just if you want another fun option for dusting the truffles!)

☀️ METHOD:


1. Zest 1 entire lemon. Set aside the zest in a bowl + separate out a small portion of ½ teaspoon lemon zest for later.

2. Chop white chocolate into small chunks and add to a medium mixing bowl. Set aside.

3. In a small saucepan, melt the butter on a low heat. Add in lemon zest. Stir in cream and turn off the heat just before it is boiling.

4. Using a fine-mesh sieve, pour the creamy lemon zest butter mixture over the white chocolate.

5. Add the small portion of ½ teaspoon lemon zest and vanilla extract into the bowl, then stir until the mixture is smooth.

6. Cover and refrigerate the truffle mixture for about 2 hours (until it is firm enough to handle).

7. Scoop 1 tablespoon of the chilled truffle mixture and form into balls using your hands (try to work quickly as the heat from your hands will warm them up and they can become trickier to roll)

8. Roll each ball in the icing sugar and lay carefully on a plate. (Feel free to experiment with toppings here - I also rolled half of my truffle balls in white sugar and a little lemon zest and they were incredible!)

9. Refrigerate the truffles for at least 1 hour before devouring them.

Enjoy!

These truffles include cream so must be stored in the fridge until ready to eat. They will last around 6 days in the fridge (or you can keep them in the freezer for up to 3 months). You can eat them straight from the freezer if you wish.

Helpful Notes:

Question: What is Thickened Cream?

Answer: Thickened Cream is a type of common cream used in baking which has 35% milk fat and thickening agents added such as gelatin or vegetable gum (which makes it easier to whip and less likely to separate or curdle in baking).

Thickened Cream is a very common cream used here in Australia but it might go by another name in your country. Google is your best friend here :)

If in doubt you can read the fat content on the label to see which is which. Single cream (often labelled “pouring cream”) contains 33-35% fat, double cream has 60-66% fat, and thickened cream is single cream with a thickening agent added. Thickened cream typically refers to cream that has stabilizers added, like gelatin or agar for example, to help it hold shape when whipped.


Question: I don’t like one (or more) of the ingredients in this recipe - can I substitute ingredients out for something else?

Answer: Yes! Feel free. Google is a wonderful resource if you get stuck and don’t know what a good alternative would be to swap something for.
