Chocolate Chickpea Brownie Batter

This ✨Chocolate Chickpea (and Peanut Butter) Brownie Batter ✨ was INCREDIBLE 😍

Josh said it was 'deceptively delicious' 🤭

I’ve been craving brownies lately and wanted to try a ‘healthier’ option for a fully edible brownie batter… using chickpeas!

By ‘fully edible’ batter I mean absolutely no egg. I’ve called this ‘brownie batter’ because this is the kind of dessert you nom by the spoonful and it totally resembles cookie dough/brownie batter :D

We’ve had far too many cans of chickpeas sitting in our pantry and today was the perfect cozy home day to crack into them and create this insanely easy, delectable dessert :D

RECIPE:

✅1 can chickpeas (washed and skins peeled)
✅1/4 cup dark coco powder
✅2 Tablespoons Almond milk
✅1/4 cup Golden Syrup
✅1/2 cup smooth peanut butter
✅1 teaspoon vanilla extract
✅2/3 cup dark chocolate chunks

1. Wash and remove all skins from chickpeas (super important you don't have any skins!)

2. Blend everything (except the chocolate chunks) all together until smooth

3. Fold in the chocolate chunks and enjoy!

I topped mine with extra chocolate chunks :D

This was the perfect ‘healthy-ish’ spin for a drizzly, windy, cozy day at home with the pup :)

Helpful Notes:

Question: How do I get rid of the chickpea skins?

Answer: Wash the can of chickpeas in a strainer and place them between two pieces of paper towel (or clean tea towel folded in half). Gently roll the chick peas between the two pieces of paper towel and the skins will eventually rub off. Then comes the slightly tedious part of picking all the skins out of the pile. Be sure to get rid of all the skins for a smooth cookie dough-type consistency.

Question: Why is it difficult to blend the ingredients? Am I doing something wrong?

Answer: All blenders are different - how easy it is for you to blend everything together will depend on what type of blender you have and how powerful it is. Make sure to periodically stop your blender and scrape the batter down regularly to get a smooth batter :)

Question: I don’t own a blender - can I make this without one?

Answer: Although I haven’t tried it, I’m sure you could make this with just a fork/masher + a bit of patience :) You’ll be mashing for quite a while without a blender though so be prepared for a workout :) The brownie batter will be worth it though!

Question: How do I store the dessert? How long does it last?

Answer: Store this in an airtight container in the fridge for up to 3 days (I promise it won’t last that long though - it’s quite addictive)!

Question: Is this dessert Gluten Free?

Answer: Yes! Just make sure your chocolate you buy is ‘gluten free’.

Question: I don’t like one (or more) of the ingredients in this recipe - can I substitute ingredients out for something else?

Answer: Yes! Feel free to substitute out any of the ingredients listed here. Google is a wonderful resource if you get stuck and don’t know what a good alternative would be to swap something for. For example, head over to Google and type in ‘almond milk swap’ and you’ll be presented with a range of options to choose from (like oat milk instead of almond milk!). If you’re still stuck, feel free to reach out to me on Instagram and I’ll do my very best at finding you a good alternative suggestion for ingredient swaps!

Question: Did your dog get to eat any?

Answer: Haha nooo this dessert definitely is NOT ok for dogs (chocolate and peanut butter are no-nos for doggos). She was a lovely little helper though and thoroughly rewarded with bellyrubs and greek yogurt for her dessert instead :D

Question: Was this delicious?

Answer: Yes! Josh and I were both shocked at how delicious this turned out! Just thinking about it and I’m already craving it again :) I would definitely recommend trying this one out if you’re into quirky desserts and love chocolate.
